Improv Lunch

I had an eggplant in the house and was craving Eggplant Parmesan, but didn’t feel like going through all that effort for dinner. Not to mention Andy’s not a big fan of eggplant. So I improvised and invented a quick and tasty lunch.

15 minute Eggplant Parmesan(ish)

Cube however much eggplant you want (I did about half of a medium sized eggplant.) Saute in oil over medium high heat until softened. Sprinkle with plain bread crumbs, oregano, and Italian seasoning. Let the bread crumbs brown a bit. Pour some prepared marinara sauce into the saute pan (I used about a 1/4 cup). Remove from heat. Stir well and sprinkle with some mozzarella cheese. Viola, lunch.
